Paired with extra-long grain white basmati rice, this wholesome mix creates a beautifully balanced taco rice bowl meal that’s both flavorful and satisfying.

The plan is simple: first, we’ll make our flavorful fajita seasoning. Then, we’ll marinate the chicken breast pieces in it to infuse perfect depth of flavor. Next, sauté the chicken with fresh vegetables, like colorful bell peppers for crunch and natural sweetness. Finally, layer everything over fragrant cilantro rice to assemble a complete chicken taco rice bowl.

Easy Chicken Taco Rice Bowl with Fajita Seasoning

A flavorful taco rice bowl recipe that brings together tender chicken, fragrant extra-long basmati rice, and just the right amount of fajita seasoning throughout.

Ingredients

For Fajita Seasoning:

For the Bowl:

  • 1.5 cups chicken breast, cut into bite-sized pieces

  • Oil (as needed)

  • 2 cups bell pepper slices (mixed colors)

  • Our Himalayan white salt (to taste)

  • 2 cups POI’s white basmati rice, cooked

  • Lemon juice (to taste)

  • Fresh cilantro, chopped

Directions

  1. Make Fajita Seasoning:Mix ginger powder, garlic, chili flakes, black pepper, and Himalayan salt in a small bowl.

  2. Marinate Chicken:Rub the fajita seasoning onto the chicken pieces and let it rest for at least half an hour minutes.

  3. Cook Chicken:Heat oil in a pan, sauté the marinated chicken until golden brown and cooked through. Set aside.

  4. Sauté Veggies:In the same pan, add bell pepper slices and a pinch of salt. Cook until tender-crisp, then return the chicken to the pan and mix well.

  5. Flavored Rice:In a separate pan, heat a little oil. Add cooked white basmati rice, lemon juice, and chopped cilantro. Toss gently to combine.

  6. Assemble:Layer the cilantro rice in serving bowl, top with the chicken and bell pepper mix, and garnish with extra herbs or lime slices if desired.
