170g unsalted butter
300g brioche, torn
250g shortbread
750g cream cheese, softened
250g sour cream, at room temperature
3 eggs plus 1 egg yolk
1 cup (220g) Pride of India's Natural Crystal Rock Sugar Whole
Preheat the oven to 160°C.
Grease a pan with butter.
Place butter in a saucepan and melt for 4-5 mins.
Keep it aside in a bowl.
Put brioche in a mixer until finely chopped and keep it aside.
Mix shortbread in the processor until there are fine crumbs.
Add the crumbs in the brioche bowl and add the butter in it.
Press evenly on the base of the pan.
Mix the cream cheese in the processor until smooth.
Add the sour cream, eggs, and sugar and combine well.
Pour in the pan.
Combine sugar and cinnamon in a bowl and sprinkle on the top.
Bake for 1 hour and 10 minutes.
Chill for 4 hours and serve.
