Put chia seeds, linseeds, poppy seeds and almond milk in a bowl and stir the mixture. Let it sit for about 10 minutes; it will create a nice gel-like consistency.

Now pour the chia seed gel to the mashed banana bowl along with oats, shredded coconut, almond butter, and cinnamon. (Add sweetener if you want) Mix it well.
Add some dates and chocolate chunks to the mixture. (If you want to keep it a healthy option, you can avoid using chocolates)
Scoop out dough (around 1-2 tablespoons) onto a greased cookie sheet and use a spoon/fork to press the dough down a little. It should form a good cookie shape now.
Place in oven and bake for 17-20 minutes, or until the bottom of the cookies have browned a tiny bit.
