The best way to whip up a quick meal is to add some delicious flavor to the already aromatic and colorful golden basmati rice.
Boil the rice as per our preparation instructions. Fluff the rice with a fork and allow to cool for 20 minutes.
Heat 1 tablespoon of sesame oil in a large nonstick skillet over medium-high heat. Add 1 egg and cook, stirring, for 2 minutes, or until firm. Transfer to a bowl and reserve. Heat the remaining 1 tbsp. oil and add 2 tsp. grated ginger and 1 tsp. minced garlic. Stir for 2 minutes.
Add 1/2 cup each of frozen peas and carrots and the rice. Cook for about 3 minutes. Add 3 tbsp. reduced sodium soy sauce and cook for 5 minutes longer. Garnish with some optional cashew nuts and serve hot.
